Here goes a delicious recipe:
Monkfish with Maresme Peas
Ingredients:
2 pieces of monkfish per person
1/2 kg unpeeled peas
2 spring onions
4 tender garlic
flour
Olive oil
Salt
For broth:
Monkfish bones and skin
1 carrot
1 onion
1 garlic
Water and salt
For the sauce:
1 garlic clove
6 toasted almonds
parsley
1 stream of stale wine
Boil the monkfish bones, skin and vegetables for 30 minutes.
Flour the monkfish, fry it and reserve. In the same oil fry the onions and garlic. When golden add the sauce and stale wine cook for 3 to 4 minutes more.
Pour the strained broth and when it boils add the peas. When
the peas are cooked add the pieces of monkfish cook for 5 minutes.
